Crumb Cake Muffins : Muffin Recipe

Ingredients (For 8 pieces)
For the crumb topping
50 g unsalted butter
90 g all purpose flour
100 g brown sugar
1/8 teaspoon salt
1 teaspoon ground cinnamon

Instructions
Mix everything together and set aside in the refrigerator.

For the cake muffins
1 cup cake flour
1 teaspoon baking powder
1/2 cup granulated sugar
1/8 teaspoon salt
80 g unsalted butter at room temperature
60 g yogurt at room temperature
3 tablespoons milk at room temperature
1 egg at room temperature
1 teaspoon vanilla extract
50 g icing sugar for sprinkle the muffins

Instructions
1.In a mixing, beat the butter for 20 seconds on a low speed.
2.Beat in the granulated sugar for about 20 seconds at low speed.
3.Beat in the egg for about 30 seconds at high speed.
4.Stir in the yogurt, salt and vanilla extract.
5.Combine together the cake and baking powder.
6.Add half of the flour mixture into the batter mixture.
7.Beat the ingredients together for about 10 seconds at low speed.
8.Pour in the milk.
9.Beat in the remaining half of the flour mixture for about 10 seconds. Don’t over mix.
10.Spoon the batter into muffins liners.
11.Bake the muffins for 5 minutes at 200°C.
12.Reduce the heat to 180°C.
13.Bake the muffins for another 18 minutes at 180°C.
14.Let the muffins cool for about 10 minutes.
15.Sprinkle the muffins with icing sugar. Enjoy.
