Fluffy and Moist Chiffon Cupcakes Recipe

In this video, I will show you how to make delicious chiffon cupcakes. These moist chiffon cupcakes are super easy to make and so moist – for days! They are my favourite cupcake!

Ingredients
2 egg yolks
25 g sugar
30 g vegetable oil
2 tbsp milk
46 g cake flour
1/2 tsp baking powder

2 egg whites
30 g sugar

For the buttercream frosting
115 g butter, softened
170 g powdered sugar
1/2 tsp vanilla extract
1 tbsp whipping cream
A drop of food colouring
A pinch of salt

Instructions
1.In a mixing bowl, whisk in together the egg yolks, 25 g sugar, vegetable oil and milk.
2.Mix together the cake flour and baking powder.
3.Fold the flour mixture into the egg yolk mixture until smooth.
4.In another mixing bowl, beat the whites until foamy.
5.Add in the 30 g sugar and beat the egg whites and sugar until soft peaks formed.
6.Divide the egg whites into 3 parts and mix with the egg yolk mixture one at a time.
7.Spoon the butter into cupcake liners.
8.Bake cupcakes in the preheated oven for 15 minutes on 170°C.
9.Let the cupcakes cool completely.
10.For the buttercream frosting, beat together the butter, powdered sugar, vanilla extract, whipping cream, salt and food colouring unto smooth.
11.Use the buttercream frosting to pipe onto cupcakes.
12.Enjoy.
