Ingredients (For 12 Muffins)
150 g cake flour
2 tsp baking powder
1/4 tsp salt
120 g unsalted butter at room temperature
120 g granulated sugar
2 eggs at room temperature
2 tbsp milk at room temperature
150 g raspberries
1.In a mixing bowl, combine together the cake flour, baking powder and salt.
2.Sift dry ingredients 1 time and set aside.
3.In another mixing bowl, beat in the butter until smooth, for about 2 minutes on medium speed.
4.Beat in the granulated sugar little by little until the sugar is gone, using medium speed.
5.Beat in the eggs one at a time and beat each egg for 30 seconds at high speed.
6.Beat in 1/3 of the flour mixture, 1 tbsp milk, 1/3 of the flour mixture, 1 tbsp milk and 1/3 of the flour mixture on low speed. Do not over mix.
7.Stir in the raspberries.
8.Spoon the batter into muffin liners.
9.Bake the muffins for about 20 minutes in the preheated oven,
