Thai Style Banana Cake Muffins : Muffin Recipe

Ingredients (for 10 muffins)
100 g mashed banana
50 g milk at room temperature
1/2 tsp vanilla extract
120 g cake flour
1 tsp baking powder
1/4 salt
70 g brown sugar
1 egg at room temperature
40 g yogurt at room temperature
85 g vegetable oil
1/2 of lemon juice
60 g sliced almonds

Instructions
1.In a mixing bowl, combined together the cake flour, baking powder and salt.
2.Sift the dry ingredients together.
3.Stir in brown sugar and set aside.
4.In another mixing bowl, beat in the egg yolk and white until combined.
5.Beat in the milk, vegetable oil, vanilla extract and yogurt.
6.Pour wet ingredients into dry ingredients and mix well, but do not over mix.
7.Stir in the mashed banana.
8.Spoon the batter into muffin liners.
9.Top each muffin with sliced almonds.
10.Bake the muffins for 20 minutes in the preheated oven on 180°C.
11.Let the banana cake muffins cool for 5 minutes and enjoy.
