Banana Almond Muffins : Muffin Recipe

Ingredients ( For 8 pieces )
1 egg at room temperature
124 g mashed banana
1/4 cup ( 56 g ) milk at room temperature
1/2 cup ( 93 g ) granulated sugar
1 cup ( 90 g ) cake flour
1 teaspoon baking powder
1/8 teaspoon salt
20 g ground almond
1/4 cup ( 60 g ) vegetable oil
60 g slices almond

Instructions
Preheat the oven to 180°C.
1.In a mixing bowl, crack in the egg.
2.Beat the yolk and egg white until well blended, 30 seconds at medium speed.
3.Beat in the milk and vegetable oil for about 20 seconds.
4.In another mixing bowl, combine the cake flour, salt, baking powder, granulated sugar and ground almond together.
5.Pour the liquid ingredients into the dry ingredients.
6.Beat the ingredients together for about 20 seconds at low speed.
7.Stir in the mashed banana, using a spatula. Don’t over mix.
8.Spoon the batter into muffin liners.
9.Sprinkle with 60 g slices almond.
10.Reduce heat to 160°C and bake the muffins for 23 to 25 minutes.
11.Let the muffins cool for 5 minutes. Enjoy.
