Red Wine Cake Muffins Recipe

Ingredients (For 11 muffins)
100 g butter at room temperature
100 g granulated sugar
1/4 teaspoon salt
2 eggs at room temperature
120 g cake flour
1 teaspoon + 1/2 teaspoon baking powder
1 teaspoon cocoa powder
1 teaspoon ground cinnamon
100 g chopped chocolate
60 g chopped almonds
50 ml red wine

Instructions
Before you start making muffins, preheat the oven to 200°C.
1.In a mixing bowl, combine together the cake flour, baking powder, cocoa powder and ground cinnamon.
2.Sift the dry ingredients until well combined 1 time. Set aside.
3.In another mixing bowl, beat in the butter for about 10 seconds at medium speed.
4.Beat in the granulated sugar little by little until the sugar is gone. Using at medium speed.
5.Beat in the eggs one at a time for about 30 seconds until the eggs are gone.
6.Beat in the salt for about 10 seconds.
7.Beat in 1/2 of the flour mixture, red wine and 1/2 of the remaining flour mixture at low speed, but do not over mix.
8.Spoon the batter into muffins liners.
9.Sprinkle with the chopped chocolate and chopped almonds.
10.Bake the muffins for about 5 minutes at 200°C. Reduce the heat to 165°C and bake the muffins for another 15 minutes.
11.Let the muffins cool for about 10 minutes. Enjoy.
